Crunchy Avocado Kimchi Salad Recipe
A fresh kimchi salad that's quick, easy, and full of goodness!
Equipment
- Chopping board
- Chef's knife
- 1 Stainless steel bowl
Ingredients
For the Salad
- 2 avocados
- Fresh coriander (to garnish)
- Roasted sesame seeds (to garnish)
For the Dressing
- ⅔ cup kimchi
- 1 ½ tbsp. soy sauce
- 2 tbsp. maple syrup
- 1 tbsp. toasted sesame oil
- 1 ½ tbsp. olive oil
- 1 green onion
- 1 tbsp. lemon juice
- 2 pinches roasted sesame seeds
- 2 tbsp. chopped peanuts
Steps
Preparing the Sauce
- Finely chop the kimchi.
- Chop the green onion.
- Mix together all the ingredients for the sauce.
Dressing the Salad
- Peel and slice the avocados.
- Arrange on a plate and top generously with the dressing.
- Sprinkle with coriander, sesame seeds and peanuts.
- Enjoy!
Notes
🍛 For a more substantial meal: Add brown rice or quinoa for a satiating version. 🥜 No peanuts? Replace them with slivered almonds or sunflower seeds. 🌶️ Kimchi too spicy for kids? Try a milder kimchi or mix it with a little plain yogurt. 🏃 Express tip: Prepare this sauce in advance and keep it in the fridge to use it all week long!
