🍲 Don’t know how to eat your fermented beets that are lying around in the fridge? It’s time to turn them into a delicious homemade borscht soup: a warm, nourishing soup perfect for digestion.
This revisited version of the great Eastern European classic is ideal for a gentle introduction to fermentation. Easy to prepare, it combines vegetables, fresh herbs, and a touch of acidity – everything you need for a comforting and healthy meal … and really tasty!


Borscht Recipe (Lacto-Fermented Beet Soup)
Beetroot soup (borscht) is easy, comforting, and full of goodness, giving you a gentle introduction to cooking with fermented foods.
Equipment
- Chopping board
- Chef's knife
- Peeler
- Large pot
Ingredients
- ¾ cup diced fermented beets
- 1 onion
- 1 carrot
- ¼ head cabbage
- 2 medium potatoes
- 1 tbsp. tomato paste
- 1 bay leaf
- 5 juniper berries
- 2 garlic cloves
- ⅔ cup smoked bacon
- 6 tbsp. beet brine
- 5 ¼ cups water or vegetable stock
- Salt, sugar, pepper to taste
- Vegetable oil
For Serving
- 1 tbsp. sour cream
- 1 pinch fresh herbs (dill, parsley,...)
Steps
Prepare the Ingredients
- Mince the onion, cabbage and herbs.
- Steam the cabbage for a few minutes. Set aside.
- Peel and dice the potatoes and carrots.
- Grate the garlic.
- Remove the skin from the bacon and cut into pieces.
Prepare the Borscht Soup
- Heat a little oil in a pan. Fry the bacon, then the onion and beet for a few minutes.
- Add the carrots and cabbage and cook for 5 minutes.
- Cover with water and add the bay leaf, juniper berries, garlic, and tomato paste. Let simmer for 20 to 25 minutes.
- Add the potatoes and continue cooking until they have melted (10 to 15 minutes).
- At the end of the cooking time, add the beet brine. Adjust the seasoning with salt, pepper, and a pinch of sugar if necessary.
Serve the Borscht Soup
- Serve hot in a bowl.
- Top with a spoonful of sour cream.
- Sprinkle with fresh herbs.
Notes
🔪 Grated fermented beets: If your beets are grated, add them at the end of cooking, at the same time as the potatoes. 🌱 Vegetarian version: Replace the bacon with white beans or legumes that you have cooked beforehand. 🥩 Richer version: Add chuck or rib steak to simmer with the vegetables.
