Chicken Kimchi Mayo Sandwich Recipe

- Bread knife
- Cutting board
- Mixing bowl

Ingredients
For the mayonnaise
- 1 egg yolk
- ⅔ cup canola or sunflower oil
- 2 tsp. mustard
- Salt and pepper
- Cider vinegar
For the sandwich
- ⅓ of baguette
- ¼ cup kimchi
- ½ cup cooked chicken
- 1 green onion
- ⅓ cup mayonnaise (see above)
- 2 salad leaves
Steps
Preparing the Mayonnaise
- Mix the egg yolk, mustard, pepper, and salt in a bowl.
- Add the oil very slowly, in a thin stream, whisking vigorously.
- Finish by adding a dash of cider vinegar.
- Check the seasoning and set aside.
Preparing the Ingredients
- Drain the kimchi and chop if necessary.
- Chop the green onion.
- Shred the chicken.
Making the Sandwich
- In a bowl, mix the shredded chicken, kimchi, green onion, and mayonnaise. Adjust the seasoning.
- Using the knife, open the bread in half and place the salad leaves on each side.
- Top generously with the mixture.
