Once fermented, squash can be added to dishes (risotto, salads, etc.) or eaten on its own as an appetizer.


Lacto-Fermented Squash Recipe
Fermenting squash is a simple way of preserving this vegetable in a healthy, natural way, and enjoying the benefits of fermentation.
Equipment
- Chopping board
- Chef's knife
- 1 Glass for diluting the salt
- Tablespoon
Ingredients
- 1 medium squash (Red Kuri squash)
- 1 bay leaf
- 6-7 black peppercorns
- ½ tsp. yellow mustard seeds
- 1 onion
- 1 garlic clove
- 1 sprig of thyme
- Water (enough to fill the jar)
- 1 ½ tbsp. salt
Steps
Prepare the Ingredients
- Cut the squash in 2, remove the seeds with a tablespoon, and cut into quarters or cubes.
- Peel the onion and garlic and cut into large chunks.
Fill the Jar
- Place the mustard seeds, peppercorns, bay leaf, and sprig of thyme at the bottom of the jar.
- Arrange the pieces of squash, onion, and garlic tightly together.
Ferment the Squash
- In a glass, mix the salt with a little water to dissolve it well and pour this brine into the jar. Top up with the remaining water to cover the vegetables.
- Place a ViscoDisc insert to prevent the vegetables from rising above the water.
- Close the jar tightly with the rubber seal.
- Store at room temperature for 3 weeks (a dish underneath will prevent any spillage).
Notes
🔪 You can use any variety of squash, but remember to peel them if needed (Butternut, Hungarian Blue...) Easily vary the flavours with fresh ginger, turmeric, gochugaru chili, or even coriander seeds. Indulge yourself!
