Dumplings are already a classic. But homemade fermented dumplings are pushing the limits!

By combining kimchi and stir-fried oyster mushrooms, you’re about to discover a new dimension of flavour:

  • The acidity and spiciness of the kimchi, counterbalanced by
  • The sweetness and slightly caramelized side of the oyster mushrooms.

All this is cooked twice, first steamed, then pan-fried, for a perfect balance between softness and crispiness.

Kimchi and Oyster Mushroom Dumpling Recipe

This dumpling variant will give your dumplings an umami boost for a tasty, gourmet moment!

Equipment

  • Chopping board
  • Chef's knife
  • 1 Stainless steel or glass bowl
  • Saucepan with steam basket
  • Frying pan
  • 1 floured baking tray for arranging the dumplings

Ingredients
  

  • 12 dumpling doughs
  • Vegetable oil for cooking

For the Stir-Fried Oyster Mushrooms

  • 2 cups oyster mushrooms
  • 1 shallot
  • Pepper to taste
  • 2 tbsp. soy sauce
  • 2 tsp. miso
  • 1 tsp. toasted sesame oil
  • tsp. olive oil
  • 1 tbsp. maple syrup
  • 1 tbsp. lemon juice

For the Stuffing

  • Stir-fried oyster mushrooms (see above)
  • ½ cup kimchi
  • 1 green onion

Steps
 

Preparing the Ingredients

  • Finely chop the shallot.
  • Chop the green onion.
  • Coarsely chop the kimchi to keep some crunch.
  • Shred the oyster mushrooms by hand.

Preparing the Stir-Fried Oyster Mushrooms

  • In a bowl, mix the soy sauce, miso, sesame oil and maple syrup.
  • Heat a frying pan over high heat with a little oil.
  • Cook the oyster mushrooms over high heat to colour them and remove their water. Season with pepper.
  • Add the shallot and cook for 1 to 2 minutes.
  • Deglaze with the sauce, coat the oyster mushrooms well with it and continue cooking until caramelized. Set aside.

Finalizing the Dumpling Filling

  • Chop the oyster mushrooms after cooking.
  • Mix with the chopped kimchi and green onion.

Assembling the Dumplings

  • Take a dumpling dough.
  • Place 1 tsp. of filling in the centre.
  • Fold crosswise to close.
  • Place on a floured baking sheet.

Cooking the Dumplings

  • Cook the dumplings for 5 to 7 minutes in a steamer basket or in a large quantity of boiling salted water.
  • Once cooked, brown the dumplings on one side in a hot frying pan for about 5 minutes, for the ultimate crispiness!
  • Serve immediately with your choice of sauce.

Notes

🏆 Challenge yourself to the limit by making your own dumpling dough.
🌶️ Pair them with a fermented hot sauce, a sweet and sour sauce or homemade vinaigrette.
💥 Boost flavours by using more mature kimchi. You'll lose a little texture but gain in flavour!
