Equipment

  • Cheese grater
  • Stainless steel or glass bowl
  • Whisk
  • Non-stick frying pan

Ingredients
  

  • 6 eggs
  • ½ cup kimchi (drained)
  • ¼ cup grated cheese (sharp cheddar, Gruyère, Parmesan...)
  • 1 green onion or some chives
  • Salt and pepper
  • Vegetable oil for cooking

Steps
 

Preparing the Ingredients

  • Mince the green onion thinly.
  • Coarsely chop the kimchi (well drained so as not to soak the omelet).
  • Grate the cheese.

Preparing the Kimchi Omelette

  • Break the eggs into a bowl and add a pinch of salt and pepper.
  • Whisk vigorously until the mixture is smooth and slightly frothy.
  • Stir in the chopped kimchi and grated cheese.

Cooking the Omelette

  • Heat a drizzle of oil in a frying pan over a medium heat.
  • Pour in the egg mixture and evenly distribute the kimchi pieces.
  • Sprinkle the green onion over the top.
  • Cook, without stirring, until the edges are set but the centre remains slightly runny (adjust according to the desired texture).
  • Fold in half, serve immediately, and enjoy!

Notes

💥 Extra punch: Add 1 tbsp. homemade gochujang or miso to the whisked eggs to impart an incomparable umami note.
