Sauerkraut Potato Salad Recipe

A hearty potato salad with sauerkraut combining the benefits of fermentation with delicious flavour!
Prep Time 15 minutes
Cook Time 20 minutes
Servings 4 people

Equipment

  • Chopping board
  • Chef's knife
  • Salad bowl
  • Colander
  • Bowl for the dressing
  • Saucepan

Ingredients
  

  • 6 medium potatoes
  • ¾ cup raw sauerkraut
  • 1 red onion
  • 1 green onion
  • 2 tbsp. dried raisins (rehydrated)
  • 1 tbsp. parsley

For the Dressing

  • 4 tbsp. canola oil
  • 1 tsp. whole grain mustard
  • 2 tbsp. cider vinegar
  • Salt and pepper

Steps
 

Cook the Potatoes

  • Place the unpeeled potatoes in a saucepan of cold salted water.
  • Bring to the boil and cook for 20 to 30 minutes until tender.
  • Drain and rinse under cold water to stop the cooking process, then leave to cool.

Prepare the Other Ingredients

  • Chop the parsley.
  • Rehydrate the dried raisins in warm water for 20 minutes.
  • Finely chop the red and green onions.

Prepare the Dressing

  • In a bowl, mix the mustard and cider vinegar.
  • Drizzle in the canola oil while mixing.
  • Taste and adjust the seasoning if necessary.

Assemble the Salad

  • Cut the potatoes into pieces and place them in a salad bowl.
  • Add the sauerkraut, dried raisins, onions and some of the parsley.
  • Add the vinaigrette and mix well to coat the salad.
  • Sprinkle with the remaining parsley just before serving.

Notes

🧀 Fancy something more indulgent? Add some cubes of Comté cheese or walnuts.
🥩 A protein-rich version? Add some diced ham or grilled bacon bits.
🍏 A touch of freshness? A few diced apples and some celery will work wonders!
