Sauerkraut Soup Recipe
Equipment
- Chopping board
- Chef's knife
- 1 stockpot
Ingredients
- 2 cups drained sauerkraut
- ⅔ cup smoked bacon or lardons
- 1 onion
- 1 leek white
- 2 medium potatoes
- 1 cup white wine
- 3 cups stock (vegetable or chicken) or water
- Some juniper berries
- 1 bay leaf
- Pepper
- 2 tbsp. vegetable oil or butter
- Sour cream to serve
- Parsley (optional)
Steps
Preparing the Ingredients
- Chop the onion and leek white.
- Peel and dice the potatoes.
- Chop the parsley.
- Cut the bacon into pieces.
Preparing the Soup
- Heat the oil or butter in the stockpot over high heat.
- Brown the bacon for a few minutes until nicely colored.
- Add the onion and leek and cook for 10 minutes, stirring constantly.
- Add the sauerkraut and white wine. Bring to the boil and reduce by one ⅓.
- Add the stock, bay leaf, and juniper berries. Season with pepper.
- Bring to a boil, add the potatoes, and cook, covered, over a low heat for 25 minutes.
Serving the Soup
- Serve immediately, adding 1 tsp. sour cream and parsley.
- Enjoy it hot!
