Sauerkraut Soup Recipe

A comforting, hardy and tasty dish for cooking sauerkraut the easy way.

  • Chopping board
  • Chef's knife
  • 1 stockpot

Ingredients
  

  • 2 cups drained sauerkraut
  • cup smoked bacon or lardons
  • 1 onion
  • 1 leek white
  • 2 medium potatoes
  • 1 cup white wine
  • 3 cups stock (vegetable or chicken) or water
  • Some juniper berries
  • 1 bay leaf
  • Pepper
  • 2 tbsp. vegetable oil or butter
  • Sour cream to serve
  • Parsley (optional)

Steps
 

Preparing the Ingredients

  • Chop the onion and leek white.
  • Peel and dice the potatoes.
  • Chop the parsley.
  • Cut the bacon into pieces.

Preparing the Soup

  • Heat the oil or butter in the stockpot over high heat.
  • Brown the bacon for a few minutes until nicely colored.
  • Add the onion and leek and cook for 10 minutes, stirring constantly.
  • Add the sauerkraut and white wine. Bring to the boil and reduce by one ⅓.
  • Add the stock, bay leaf, and juniper berries. Season with pepper.
  • Bring to a boil, add the potatoes, and cook, covered, over a low heat for 25 minutes.

Serving the Soup

  • Serve immediately, adding 1 tsp. sour cream and parsley.
  • Enjoy it hot!

Notes

🥣 More creaminess? To get a more creamy sauerkraut soup, you can remove the bacon once nicely browned, continue the recipe as indicated, and blend the soup once cooked to get a nice velvety texture before reintegrating the bacon.
🌱 Vegetarian version: You can replace the pork with smoked tofu for a depth of flavour, all without meat!
🍯 For added sweetness: You can add 1 to 2 tablespoons of honey or maple syrup at the end of cooking, to counterbalance the acidity of the sauerkraut.
