Tacos With Fermented Vegetables Recipe

This healthy tacos recipe, full of flavour and packed with goodness, is perfect for a family picnic or a quick lunch without giving up indulgence!
Prep Time 20 minutes
Servings 4 tacos

Equipment

  • Cutting board
  • Chef's knife
  • Stainless steel or glass bowl
  • Fork
  • Frying pan

Ingredients
  

  • 4 corn or wheat tortillas

For the Guacamole

  • 2 ripe avocados
  • 1 lime (juice and zest)
  • ½ medium red onion (chopped)
  • ½ tsp. cumin
  • ½ tsp. paprika
  • 1 pinch of chili pepper (optional)
  • Salt and pepper

For the Topping

  • ½ cup lacto-fermented carrots
  • ½ cup lacto-fermented fennel
  • ¼ cup lacto-fermented radishes
  • 4 sun-dried tomatoes
  • 1 green onion
  • 3 tbsps. vegetable oil
  • ½ cup feta cheese
  • A few leaves of fresh coriander
  • A few leaves of fresh mint (optional)

Steps
 

Prepare the Guacamole

  • Crush the avocados with a fork in a bowl.
  • Add the lime juice, zest, red onions, and spices.
  • Mix, taste, and adjust the seasoning.

Prepare the Garnish

  • Finely chop the fermented vegetables, sun-dried tomatoes and spring onion.
  • Remove the coriander leaves from the stalks.
  • Finely dice the feta cheese.
  • Mix everything in a bowl with a drizzle of oil. Adjust the seasoning to taste.

Heat and Garnish the Tacos

  • Heat a frying pan with a little oil and brown each tortilla for 1 minute on each side.
  • Spread a generous spoonful of guacamole on each taco.
  • Add the fermented vegetable garnish.
  • Decorate with a few leaves of coriander or fresh mint.

Notes

🥬 Vegan version: Replace the feta with crumbled tofu or quinoa.
🍖 Meat option: Add leftover shredded chicken or homemade minced meat.
🔪 Vary your fermentations: red cabbage, mild kimchi, bell peppers, fermented onions... have fun!
