Leeks with Miso Vinaigrette
A warm, simple French leeks vinaigrette full of fermented goodness, simple to prepare, and easy to enjoy.
Equipment
- Chopping board
- Chef's knife
- Basket steamer
- Stainless steel or glass bowl
- Whisk
Ingredients
- 6 medium leeks
- 1 ½ tbsp. miso
- ¾ cup olive oil
- 3 tbsp. lemon juice
- 1 french shallot (finely chopped)
- 1 bunch chervil or parsley (chopped)
- Pepper
- Toasted sesame seeds (optional)
Steps
Prepare and Cook the Leeks
- Cut off the green tops and roots, then wash each leek thoroughly to remove any soil.
- Cut them into 2 inch pieces, then slice them in half, lengthwise.
- Steam for 20 minutes, until they are tender.
Prepare the Dressing
- In a bowl, mix the lemon juice, miso, and pepper.
- Add the oil in a thin stream while whisking to emulsify.
- Stir in the chopped shallot and fresh herbs.
- Taste and adjust the seasoning if necessary.
Assemble the Leeks Vinaigrette
- Arrange a few pieces of leek on a plate.
- Drizzle generously with the vinaigrette.
- Sprinkle with toasted sesame seeds. Enjoy!
