This recipe uses brown rice to enhance the nutritional value of the dish. However, you can also use white rice. 😉

Natto Fried Rice Recipe

This Japanese-inspired natto fried rice is quick and nutritious, combining the benefits and flavour of natto in a delicious and surprising dish.
Prep Time 35 minutes
Servings 2 people

Equipment

  • Chopping board
  • Chef's knife
  • Non-stick frying pan
  • Wok or large frying pan
  • Fork or chopsticks (for beating the natto)

Ingredients
  

  • 2 cups brown rice (cooked and cooled)
  • 1 carrot
  • 1 onion
  • 1 inch ginger
  • cup smoked tofu
  • 2 tbsps. soy sauce
  • 2 eggs
  • 2 green onions
  • ½ cup natto
  • Vegetable oil for cooking
  • Salt and pepper

Steps
 

Prepare the Ingredients

  • Finely chop the onion, dice the carrot, and grate the ginger.
  • Cut the smoked tofu into small cubes.
  • Whisk the eggs with a pinch of salt.
  • Beat the natto vigorously with a fork or chopsticks until it becomes stringy.
  • Chop the spring onions.

Prepare the Fried Rice

  • In a wok or large frying pan, sauté the onion and carrot in a little oil for 3 minutes.
  • Add the ginger and a little water, cover, and cook until the carrot is tender. Set aside.
  • In the same pan, brown the tofu until golden. Set aside.
  • Quickly scramble the eggs in a little oil. Set aside.
  • Finally, sauté the cold rice in a little oil. Add the soy sauce. Mix well.
  • Add the vegetables, tofu, then the eggs.

Serving

  • Serve hot in bowls.
  • Place a generous spoonful of beaten natto on top.
  • Finish with chopped spring onions and a twist of pepper.

Notes

🍗 Meat version: Add some marinated chicken or braised pork.
💥 Umami boost: Dilute a little miso in the rice cooking water to add extra depth.
🍚 Add the natto directly to the hot rice before serving for an even more amazing mix of textures. However, the heat may slightly affect the extra benefits of natto.
