Pho Miso Soup Recipe

Ingredients
  

For the Miso Broth

  • 6 cups water
  • 2 leeks
  • 2 medium carrots
  • 6 button mushrooms
  • 1 medium onion
  • 1 star anise
  • 1 cinnamon stick
  • 1 tbsp. coriander seeds
  • 1 inch ginger
  • 1 garlic clove
  • 3 tbsps. miso (white or red, depending on desired intensity)

For the Garnish

  • 5 thin slices of beef (fondue meat)
  • 0.3 lbs rice noodles
  • 1 handful of fresh coriander
  • 1 handful of mung bean sprouts (optional)
  • A few Thai basil leaves (optional)
  • 1 finely chopped green onion
  • 1 lime wedge

Steps
 

Prepare the Stock

  • Peel the carrots and cut them into rings.
  • Roughly chop the mushrooms, leek greens, and onion.
  • Slightly crush the ginger and garlic with the blade of a knife.
  • Place all the vegetables in a saucepan, add the spices (star anise, cinnamon, coriander seeds, cloves, garlic, and ginger), and cover with cold water.
  • Bring to the boil, then reduce the heat and simmer for 25 to 30 minutes, uncovered.
  • Strain the broth through a fine sieve and compost the vegetables.

Prepare the Garnish

  • Cook the rice noodles according to the instructions on the packet. Drain and rinse with cold water.
  • Finely chop the spring onion.
  • Season the beef strips.
  • Remove the leaves from the coriander and Thai basil.

Assemble the Pho Soup

  • Reheat the broth, without bringing it to the boil. Season with the miso, mixing well.
  • Place the cooked noodles in each bowl, top with the beef strips, and sprinkle with fresh coriander and spring onion.
  • Pour in the steaming broth to sear the beef.
  • Garnish with lime wedges and mung bean sprouts (optional) and enjoy!

Notes

🌱 Vegan pho broth: Replace the beef with marinated tofu or sautéed tempeh. You’ll get a delicious vegetarian pho recipe!
💥 Extreme umami version: Use aged miso and enhance its flavour with a dash of soy sauce.
🦞 Seafood version: Make a shrimp broth or fish stock and replace the meat with sautéed shrimp.
🍋 Fermented garnishes: Add lacto-fermented onions or homemade lemon kosho to give your bowl even more depth.
