Ingredients

Fermentation

Flavouring

  • 2 cups pineapple juice

Steps

Fermenting the Kefir

  • Pour the coconut water into the jar.
  • Add the sugar and mix well.
  • Add the kefir grains.
  • Close tightly and allow to ferment for 48 hours at room temperature.

Flavouring

  • Using the funnel, filter the kefir into the bottle and recover the grains.
  • Add the pineapple juice and mix well.
  • For extra fizz, leave the bottle at room temperature for another 12 hours.
  • Keep refrigerated and enjoy chilled!

Notes

  1. During the first 24 hours of fermentation, nothing much will happen, which is perfectly normal. After that, the coconut water will start to become cloudy and develop large bubbles, which indicates that fermentation is going well.
  2. This kefir is quite active, so be careful during the flavouring phase. Keep an eye on it and burp it occasionally to avoid any surprises when you open it. Then, be sure to keep it in a cool place.
  3. The kefir grains used for fermentation will become very translucent and a little sticky. Keep them for future coconut water fermentation but avoid mixing them with the other grains.

I’m looking for clarity: in fermenting, step 4, it says “close tightly”. The photo appears too, to have a lid. Is this 48 hours with a lid or fabric and rubber band. I used a lid, and at about 24 hours, mold developed as well as a slimey something, underneath the liquid. The other grains are fine, coconut water is new…any ideas as to what went wrong or what I’m missing?
    Thanks!

    1. Hi, the 48h of fermentation mentioned in the fourth step is supposed to be happening in a hermetically sealed jar. Unfortunately, I am not too sure what went wrong… feel free to email us a picture of the mold and equipment used. It could help us assist you further.
