The Origins of Mojito

The invention of mojito is often attributed to Sir Francis Drake, an English Corsair from the 16th century. Initially made with aguardiente (the ancestor of rum), cane juice, mint, and lime, this cocktail evolved in the 20th century to become the classic recipe popularized in Havana.

This mojito kefir with its natural fizz and flavours, evokes all the pleasure of a mojito – but without the alcohol!

Lime and Mint Water Kefir Recipe

This original and festive lime water kefir recipe has nothing to envy other cocktails and will delight everyone at your parties.

Flavouring

  • 1 ½ limes (zest)
  • 30 mint leaves

Steps
 

Fermentation

  • Pour the water into the Kefirko or fermentation container.
  • Add the sugar and mix well.
  • Add the other ingredients mentioned in the ‘Fermentation’ section.
  • Allow to ferment at room temperature for 24 to 48 hours, or until the fig rises to the surface.
  • Pour the water kefir into a large jar and strain through the lid's built-in sieve (Kefirko) or a strainer.
  • Keep the grains until your next recipe and compost the figs.

Infusion and Bottling

  • Add the mint leaves and lime zest to the water kefir.
  • Leave in the fridge overnight for the flavours to infuse.
  • Use a strainer to remove the mint and zest.
  • Pour the kefir into the bottles using a funnel.
  • Allow to ferment at room temperature for 24 to 48 hours, until the fizz is to your liking.
  • Refrigerate to stop fermentation and enjoy!

Notes

Don't leave the mint leaves and lime zest in the kefir for too long, to avoid making the color and taste less pleasant.
For a water kefir with more character, you can use raw sugar such as rapadura, which will bring out the freshness of the lime and mint.

    We had a little struggle trying to get the de-hydrated grains going, but with your advice they are now very lively. Even the first batch that we made after activation, which I had scheduled to go down the sink, was very good. The second and third batch are delicious. Great recipe that we will fall on, but first will try some of your others. Thanks for your help
