Ingredients

Fermentation

Flavouring

  • 1 pear
  • 1 star anise

Steps

Fermentation

  • Pour the water into the Kefirko or the container of your choice.
  • Add the sugar and mix well.
  • Add the remaining ingredients.
  • Allow to ferment at room temperature for 24 to 48 hours, or until the figs rise to the surface, indicating that fermentation is active.
  • Strain the water kefir into the large jar using the sieve in the lid.
  • Keep the grains until your next recipe and compost the figs.

Flavouring

  • Wash the pear, cut it in half, remove the core and dice. Add the diced pear to the bottles.
  • Add the star anise.
  • Pour the water kefir into the bottles using the funnel.
  • Close the bottles tightly and leave them at room temperature until the fizz has developed sufficiently to suit you. Open the bottles to test the pressure every 12 hours.
  • Refrigerate and enjoy!

Notes

Pear provides sugar and yeast, making the fermentation of this kefir quite intense. Be careful when opening the bottle and keep it well chilled.
You can eat the pear cubes at your tasting sessions. Over time, they will stew slightly in the kefir, giving them a smooth consistency with a slight fizz - a real pleasure!
Don't keep this type of kefir for more than 6 days, otherwise, the pear may take on a brownish tinge due to oxidation and its flavour will become less pleasant.
If you want to keep it longer, you can filter it to remove the pieces of pear and bottle it again.
