Have you ever heard of amazake, this tasty and comforting Japanese fermented rice drink? Here is a recipe for amazake (literally "sweet sake"), so that you too can carry out this age-old fermentation very rich in health benefits!
Mix well with your hands (or a spoon, but this is much less pleasant).
Put everything in the container and add to the oven with the light on. (For those who have a yogurt-maker, add the mixture to the yogurt-maker).
Ferment for 8 to 12 hours.
Notes
A short fermentation (8 hours) will generally be sweet, while a long fermentation (12 to 16 hours) will be more acidic, or even alcoholic, if there is yeast in the area.
